Blueberry Pancakes

Ingredients

  • 1 tsp U:Me Vegetable & Olive Oil Blend
  • 100g self-raising flour
  • ½ tsp baking powder
  • 2 eggs
  • 60ml milk
  • ½ punnet blueberries
  • 2 tbsp icing sugar
  • 25g butter

Method

  • Mix self-raising flour, 1 tsp baking powder and a pinch of salt in a large bowl
  • Beat eggs and milk
  • Make a well in the centre of the flour and whisk in the milk to make a smooth batter
  • Melt a knob of butter and add to the mix
  • Add half of the blueberries
  • Heat the U:Me Vegetable & Olive Oil Blend in a non stick frying pan
  • Add a large tbsp. of batter into the pan
  • Fry for 3 minutes on a medium heat, then flip to do the same to the other side
  • Cook until golden
