Blueberry Pancakes
Ingredients
1 tsp U:Me Vegetable & Olive Oil Blend
100g self-raising flour
½ tsp baking powder
2 eggs
60ml milk
½ punnet blueberries
2 tbsp icing sugar
25g butter
Method
Mix self-raising flour, 1 tsp baking powder and a pinch of salt in a large bowl
Beat eggs and milk
Make a well in the centre of the flour and whisk in the milk to make a smooth batter
Melt a knob of butter and add to the mix
Add half of the blueberries
Heat the U:Me Vegetable & Olive Oil Blend in a non stick frying pan
Add a large tbsp. of batter into the pan
Fry for 3 minutes on a medium heat, then flip to do the same to the other side
Cook until golden
