Lebanese roasted veg

Ingredients

Serves 4

  • 300g 25mm dice sweet potato skin on
  • 70g spice shot
  • 300g 25mm dice squash
  • 150g red onions 1/8 wedge
  • 150g aubergine wedge
  • 25g sesame oil

To serve: feta cheese sliced red chillies fresh coriander

Method

Roast sweet potato and squash in the sesame oil on a non stick baking tray in a pre heated oven at 180c fan for 15 minutes

Stir in the onions, aubergine and spice shot - spread out on the tray

Roast in the oven for 30 minutes

Serve topped with feta cheese, sliced chillies and fresh coriander
